Besan ka Cheela / Tomato Omelette

They say breakfast is the most important meal of the day. 'They' is right. Starting my day with a good, healthy, filling breakfast has helped me focus well at my workplace (when I work – on and off) and pulled me through lunch time without having my tummy rumbling! There is no South Indian home in the whole world where there isn’t a container of dosa batter sitting pretty in the refrigerator with a reassuring smile and these words – I’ll be there for you. Ok I went too far generalizing. I do have various kinds of dosa batter (one at a time) at least 4 times a week. Other days are for 243 varieties of upma, puttu, string hoppers, hoppers, cheela, sandwiches etc. No day at my home goes without breakfast and you should know we don’t consider cereals as breakfast. This cheela or tomato omelette is a very filling breakfast option by itself or paired with bread or pav. And it is toddler approved. Yayy!!

Besan ka cheela or Tomato omelette is a crepe made of gram flour (or besan) with chopped onions, tomatoes and few spices. First allow me to explain why two names for this post. In Maharashtra/Mumbai, Tomato Omelette is a super common dish mostly referring to an omelette with besan and without egg. At my home it was and still eaten sandwiched between two slices of bread or even with chapati like a frankie or roll. In northern parts of India, it is known as Cheela and my understanding is that both are exactly the same.
The procedure is simply mixing all ingredients and making a crepe or dosa out of it! Gets done in a jiffy since we are just using flour and water to make the basic batter in the first place.

This measure yields about 12 cheelas.

Besan/Gram Flour – 2 cups
Onion – 1
Tomato – 1
Curry leaves  - 6-7
Coriander leaves – 6-7 sprigs
Asafoetida – ½ tsp
Cumin seeds – 1 tsp
Green chilli – 2
Oil to fry on tawa

How I prepare:
  1. Make a batter with gram flour and water. Add water slowly, make a thick paste – this will help remove lumps easily - and then add more water to make a medium thin batter (thinner than dosa batter).
  2. Finely chop onion, tomato, green chillies, curry leaves, coriander leaves. Add to the batter. Add asafoetida, cumin seeds and salt. Cheelas taste best with a loaded batter. It may be almost impossible to spread it on the tawa. Never mind – it is gonna taste amazing.
  3. Heat a tawa/skillet. Pour few drops of oil on medium hot tawa and start making cheelas - spread as much as possible without trying too hard. Cook covered so you can avoid dry spots on it. Flip and cook.
  4. Serve hot with any chutney or sauce or bread exactly like bread-omelette!
You can see in the first photo above, what each one in our house prefers to have these vegetarian omelettes with. Salsa, hot sauce, sriracha ketchup – everyone has their choice! You can add red chilli powder instead of green chillies. We love the random bite of chillies – it’s just us 😊 Make besan ka cheela or Tomato omelette for a filling breakfast when you are exploring tasty and quick breakfast or even snack options.
