Tomato Rice

We never had anything like Tomato Rice at home (yes, I swear!), reason being Mummy’s Lemon Rice. Lemon Rice used to be Mummy’s ‘rescue’ rice. After marriage, I started to wonder about the ‘quick, easy and tasty’ Tomato Rice, introduced by colleagues and friends. And then there was nothing to stop me from making this yum rice. If I’m alone for lunch/dinner, this gets made. If I have nothing but tomatoes in my fridge and no time in hand, this gets made. If I want to indulge, this gets made… in Ghee!!
Tomato rice can be made directly in the pressure cooker, everything put together. But I prefer using pre-cooked rice since the flavours are better that way and it's faster too.

I sometimes make this Tomato Fry with a spoonful of Pav Bhaji masala in it and that is relished at home. Likewise, Tomato Rice also is tastier with Pav bhaji masala. It’s the tryst between tomatoes and Pav bhaji, inseparable!

Tomato Rice - Quick, Easy and Tasty

Tomatoes – 1 large
Green Chilli – 2 slit
Turmeric Powder – a pinch
Asafoetida – a pinch
Cooked Rice – 3 cups
Garam Masala/Pav Bhaji Masala – a spoonful
Curry Leaves - 5
Coriander Leaves

How I prepare:
  1. Heat oil. Add mustard seeds and cumin seeds. Let them crackle.
  2. Add chopped tomatoes. While it cooks, add curry leaves, green chillies, asafoetida, turmeric powder and salt.
  3. After the tomatoes are cooked and turn mushy, add the Garam Masala or Pav bhaji masala, whichever you are using. Of course it is optional. Tomato rice is a winner anyway!
  4. Add the cooked rice and mix well.
  5. Last comes coriander leaves; needless to say.
  6. Serve it with any salad or raita and potato chips. Lays?! Indian masala/ Blue flavour? Wow! 

I usually let the tomatoes become very mushy and then add the rice. It’s a personal choice. Onions may be added too. Tomato Rice is also an easy lunchbox option as it gets ready very quickly. However, if you use ghee it’s best had fresh and hot!😋
