Tomato Fry

This is one of the easiest and fastest recipes on my blog. I did not think this simple Tomato Fry would be worth a blog-post, but surprisingly a friend requested for very simple dishes that students or bachelors away from home can make quickly and yet taste homely.
Tomato Fry can be made as a semi-gravy like in the picture below or as a thinner gravy depending on how you like it; or depending on whether you are having it with dosa, chapati, idly, rice or even bread. It is very easy to make and a definite one when all you have in the fridge is Tomatoes :)

Let’s get started with the first one in my series of ‘student/bachelor-cooking’.
Bachelor Cooking - Tomato Fry

Tomatoes – 3 chopped
Onion – 1 sliced
Oil – 1 tbsp
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Green Chilli – 3
Curry Leaves – 4-5
Turmeric Powder - a pinch
Asafoetida – a pinch
Red Chilli Powder – 1 tsp
Coriander powder – 1 tsp
Garam Masala (optional)
Coriander leaves – 5-6 sprigs chopped

You have a pan/kadai with some oil on a medium flame waiting for mustard seeds and cumin seeds to be popped in 😜
How I prepare:
1.   As soon as the mustard seeds and cumin seeds start a sizzling conversation, add the sliced onions and fry till translucent.
2.    Add turmeric powder, asafoetida, coriander powder, salt, curry leaves, green chillies and red chilli powder.
3.    Next add the tomatoes and cook on a high flame till they get mushy. Mix every few seconds. Add a tsp of garam masala or any other masala, if using. For a thinner gravy, add half a cup of water and cook for another 3-4 min.
4.     Add coriander leaves when hot.
5.     Enjoy hot with anything that requires an accompaniment.

This tangy Tomato Fry goes well with dosas and chapatis. After wedding, the H had put my cooking skills to test, to assess my efficiency on his personal favourite, Tomato Fry. And to nobody’s surprise, I passed with distinction. Without much effort, a perfect and easy side-dish that will cure your longing for homely food at least for ‘that’ one meal!
