Soya Nuggets Curry

Soya Nuggets or Chunks or Nutrela (that comes from the brand ‘Ruchi’) are made from Soya Beans. They are an alternative to meat for vegetarians in terms of texture and taste, most importantly nutrition. They are very high in protein and fiber; and negligible or nil in fat. We include this in our meals at least once in 2 weeks (that’s also because we love it, not just nutrition!)  The best part is that I don’t have to cut any vegetables and the preparation time is medium. I use the ‘mini’ as they absorb the gravy and flavour better.
Recently, I updated my general knowledge when I read that Soya Nuggets are also known as ‘Meal Maker’ :)

Soya Nuggets Curry

Cooking the Soya Nuggets:
Pop in 2 cups of Soya Nuggets in boiling water. Turn off the flame and keep it closed for 10-12 min. Meanwhile, get the ingredients for the gravy ready.
The nuggets will swell in size. Then, run cold water through the chunks and squeeze out the excess water with your palms. This helps the chunks absorb the beautiful flavour of the gravy. If you skip this step, the chunks will taste bland due to the water it absorbed.

Ingredients:
Soya nuggets – 2 cups
Oil – 2 tbsp
Cumin seeds – 1 tsp
Garam masala – 1 tsp
Coriander leaves – 6-7 sprigs chopped
Salt

To grind:
Dry coconut – 8-9 small pieces (optional-this helps for thick gravy)
Tomatoes – 2
Onion – 1 small
Coriander seeds – 1 tsp
Red chillies – 2-3
Ginger – ½ inch piece
Garlic – 2 small
Cinnamon – 1 stick

How I prepare:
  1. Grind the ingredients mentioned in 'To Grind'.
  2. Heat oil. Once hot, add cumin seeds and wait for it to sizzle.
  3. Add the ground paste and cook it till oil separates, the raw smell goes away.
  4. Now take the soya nuggets (of which all the water is squeezed off) and add them to the pan.
  5. Mix well. Add water to get the desired consistency. Add little water and check, then repeat if required.
  6. Add salt and garam masala (or any other masala), cook for 5-10 min on simmer. This is when the flavour gets totally infused into the nuggets and the nuggets tastes super-yum!
  7. Garnish with coriander leaves and serve with chapati/roti.

You will absolutely love the succulent soya nuggets in the curry with each piece of roti. Happy eating!
